I made these buckeyes for Matt's ship for Thanksgiving. Everybody seemed to really like them even though they had no idea what a buckeye was and ended up calling them peanut butter balls. This was my first time making them and it went pretty smooth. They are really easy to make just somewhat time consuming.Buckeyes yield:144
- 4 (16oz) Jars Creamy Peanut Butter
- 3 1/2 (16 oz) PKGS Confectioners Sugar
- 1/2 CUP Butter
- 3 (12 oz) PKGS Semi-Sweet Chocolate Chips
- 3 TBS Shortening or 1/3 Bar of Paraffin
In very large bowl mix the peanut butter, sugar and butter together. Chill in the refrigerator for an hour. Roll peanut butter mixture into balls and place on a cookie sheet. Insert a toothpick into each ball and then place in freezer for about an hour. Melt together chocolate and shortening over a double boiler or in the microwave. Dip the balls into chocolate and place on wax paper and allow to set. Remove the toothpicks. I then used my finger to smudge over the toothpick hole.
